A wedge salad is a perfect healthy and hearty meal for winter. Ian Niedzwiedz, Culinary Director of Il Porcellino Salumi creates a delicious Wedge Salad using Infinite Harvest’s Rainbow Mix Microgreens, Infinite Harvest’s Baby Red Romaine Lettuce, and Il Porcellino’s pork belly.
“Microgreens are great. They add a lot of texture, and spiciness, depending on the green you use. We like to use Infinite Harvest’s Rainbow Mix Microgreens to our salads to add a little contrast and color to really make it pop,” said Ian Niedzwiedz, Culinary Director at Il Porcellino Salumi.

• Infinite Harvest Baby Red Romaine Lettuce
• Braised Pork Belly (4-5 mins on each side)
• Blue Cheese
• Blue Cheese Dressing
• Vine Ripen Tomatoes
• Pickle Shallots

Culinary Director, Il Porcellino Salumi
Ian Niedzwiedz has worked in the food industry for 15 years and studied at the school of culinary arts at Johnson and Wales University in Denver, Colo. He is now the Head Butcher and Culinary Director at Il Porcellino Salumi where he serves some of the state’s best charcuterie. Niedzwiedz’s love for salty meats comes from his Southern mother and a Polish father. He loves to share his heritage through delicious products like head cheese, kielbasa and country ham. Il Porcellino was the Grand Champion at the Charcuterie Masters in New York City in 2018 & 2020, and named the Best Sandwich Shop in Denver by Westword.

Infinite Harvests’ microgreens and living lettuces can be ordered online and picked up at the company’s vertical farm in Lakewood, CO Monday-Friday from 9 a.m. to 4 p.m.
